Bhindi Ki Bhujia Recipe - Learn How To Make Bhindi Ki Bhujia

Bhindi Ki Bhujia is a very common green vegetable that is cooked all over the Indian Subcontinent. It is very simple to cook and have all good qualities of a green vegetable. The edible seeds of Bhindi or Ladies Finger make it beneficial for constipation. It is usually had with roti, paratha and dal-rice. On special days you can have it with poori that tastes exceptionally good. Bhindi or Ladies finger is found all over the world so you can make it even if you are not in India.

Prepare bhindi ki bhujia following the recipe given below.

Recipe Yield: 4 servings

Ingredients for making Bhindi ki Bhujia / सामग्री:

  • Lady-finger - 250 gm; (भिंडी)
  • Onion - 1 finely chopped; (प्याज)
  • Green Chilli - 2 finely chopped; (हरी मिर्च)
  • Fenugreek Seeds - 1/2 tea spoon; (मेथी दाना)
  • Salt as per taste; (स्वाद के अनुसार नमक)
  • Turmeric Powder - 1 tea spoon; (हल्दी पाउडर)
  • Cumin Seeds Powder - 1/2 tea spoon; (जीरा पाउडर)
  • Coriander Powder - 1/2 tea spoon; (धनिया पाउडर)
  • Black Pepper Powder - 1/2 tea spoon; (काली मिर्च पाउडर)
  • Red Chilli Powder - 1/2 tea spoon; (लाल मिर्च पाउडर)
  • Mustard Oil - 1 table spoon + 1/2 table spoon only if required later; (सरसों का तेल)

Procedure for making Bhindi Ki Bhujia:

  1. Take the lady-fingers in a deep vessel and fill it with plain water. Leave the lady-fingers submerged in water for 10 minutes. After 10 minutes wash then well with plain water nicely.
  2. Now slice of the top and the bottom part of each lady-finger (as shown in the images below).
  3. Now chop the lady-fingers into 1/2 inch equal sized pieces.
  4. Then heat 1 table spoon mustard oil in a kadhai and add the fenugreek seeds to it. Allow the fenugreek seeds to crackle.
  5. Then add the chopped green chilli and onion to the kadhai and saute them till they turn golden red in color.
  6. Now add the powder spices (turmeric powder, red chilli powder, black pepper powder, cumin seeds powder and coriander powder) and salt as per taste to the kadhai.
  7. Then after 1 seconds quickly add the chopped pieces of lady-fingers to the kadhai and mix with the spices by stirring the ingredients from the base of the kadhai. Lower the flame to low level.
  8. Now cover the kadhai with a lid and cook the ingredients in this manner for 2 minutes.
  9. After 2 minutes remove the lid and stir the ingredients from the base of the kadhai. Cook the ingredients over low flame only.
  10. Cover the kadhai again and cook the ingredients in this manner this the lady-finger pieces become soft and are cooked.
  11. Then remove the lid and increase the flame to high level. If required add 1/2 table spoon mustard oil more to the kadhai.
  12. Stir and cook the ingredients till the pieces of lady-fingers become crispy and then turn off the flame. Stir from the base of the kadhai so that the masala doesn't stick to the base of the kadhai.
  13. Transfer the prepared, hot and all time favorite bhindi  ki bhujia to a serving dish and serve.

भिंडी की भुजिया बनाने की प्रक्रिया:

  1. एक गहरी पतीले में भिंडी को डालें और इसे सादे पानी से भर दें। 10 मिनट के लिए भिंडी को पानी में डूबा रहने दें। 10 मिनट के बाद भिंडी को अच्छी तरह से सादे पानी के साथ अच्छी तरह धो लें।
  2. अब प्रत्येक भिंडी को ऊपर और नीचे से थोड़ा-थोड़ा काट लें (जैसा कि नीचे दी गई छवियों में दिखाया गया है)।
  3. अब भिंडी को 1/2 इंच के बराबर आकार के टुकड़ों में काट लें।
  4. फिर कढ़ाई में 1 बड़ा चम्मच सरसों का तेल गरम करें और इसमें मेथी दाना डालें। जब मेथी दाना चटकना बंद कर दें तो फिर हरी मिर्च और प्याज को कढ़ाई में डालें और सुनहरा लाल होने तक भूनें।
  5. अब कढ़ाई में पाउडर मसाले (हल्दी पाउडर, लाल मिर्च पाउडर, काली मिर्च पाउडर, जीरा पाउडर और धनिया पाउडर) और स्वाद के अनुसार नमक डालें।
  6. फिर 1 सेकंड के बाद कढ़ाई में भिंडी के टुकड़ों को डालें और कढ़ाई के तले से चलाकर भिंडी को मसाले के साथ मिलाएं। आँच को कम कर दें।
  7. अब कढ़ाई को ढक्कन के साथ कवर करें और इस तरह से 2 मिनट के लिए भिंडी को पकने दें।
  8. 2 मिनट के बाद ढक्कन को हटा दें और कढ़ाई के तले से सारी सामग्री को चलाएं। भिंडी को केवल कम आँच पर ही पकने दें।
  9. कढ़ाई को फिर से ढक दें और सामग्री को इस तरीके से तब तक पकने दें जब तक भिंडी के टुकड़े नरम न होजाएं।
  10. फिर ढक्कन को हटा दें और आँच को तेज कर दें। यदि आवश्यक हो तो 1/2 बड़ा चम्मच सरसों का तेल कढ़ाई में डालें।
  11. अब भिंडी को कुर्कुरा होने तक पकाएं और आँच बंद कर दें। (कढ़ाई के तले से चलाएं ताकि मसाले तले से चिपक न सकें।) आपकी गर्मा-गरम और सबकी पसंदीदा भिंडी की भुजिया बनकर तैयार है।
