Kaddu Ke Phool Ke Pakore or Kohde Ke Phool Ka Bachka Recipe

Like the pumpkin the pumpkin flowers are also highly nutritious and are a rich source of Vit A, C and phosphorous. Pumpkin Flower Fritters or Kaddu Ke Phool Ke Pakore or Kohde Ke Phool Ka Bachka or Kumro Phooler Bhaja is a famous and tasty dish from West Bengal. It can be served as a side-dish with rice or as a snack at tea-time. Learn how to make this dish with the help of a detailed recipe and step by step photos given below:

Recipe Yield: 4 servings (3  pakoras per serving)

Ingredients for Kaddu Ke Phool Ke Pakore / सामग्री:

  • Pumkin Flowers - 10-12;
  • Semolina - 1 table spoon;
  • Gram Flour - 2 table spoon;
  • Salt as per taste;
  •  Turmeric Powder - 1/2 tea spoon;
  • Cumin Seeds Powder - 1/2 tea spoon;
  • Green Chilli - 3-4, finely chopped;
  • Mustard Oil - as per requirement;
  • Water for batter - approximately 1/2 cup;

Procedure for making Kaddu Ke Phool Ke Pakore:

  1. Chop of the bottom of the pumpkin flowers and remove the stem and stigma. Then transfer the remaining pumpkin flower to a big vessel containing plain water. Wash them well with plain water and transfer them to a clean plate.
  2. In another plate or mixing bowl take gram flour and semolina together.
  3. Now add 1/2 tea spoon turmeric powder, salt as per taste, 1/2 tea spoon cumin seeds powder and finely chopped green chillis to it. Mix the dry ingredients together.
  4. Now add little water (approximately 1/2 cup) slowly to the dry mixture and prepare a batter of medium thin consistency.
  5. Now heat a non-stick pan and then lower the flame. Pour 1 table spoon mustard oil on the pan and spread to grease the pan.
  6. Pick one pumkin flower and dip it in the batter, so that it gets coated with batter nicely on all sides. Then place this flower on the hot pan. Prepare 4-5 flowers in the same manner and place them on the pan to cook at one time.
  7. When one side gets cooked and turns golden red in color then flip to cook in the same way on the other side. Add more oil if needed.
  8. Transfer the kaddu ke phool ke pakore (or Kumro Phooler Bhaja or Pumpkin flower fritters) prepard to a plate and prepare pakoras of the remaining pumpkin flowers in the same way. The kaddu ke phool ke pakore (or Kumro Phooler Bhaja or Pumpkin flower fritters) are ready to be served hot.

कद्दू के फूल के पकोरे बनाने की प्रक्रिया:

  1. कद्दू के फूलों के नीचे से काट कर उनकी स्टेम और अंदर के भाग को हटा दें। फिर शेष कद्दू के फूल को एक बड़े बर्तन में सादा पानी भरकर डाल दें। सादे पानी के साथ उन्हें अच्छी तरह से धोएं और फिर उन्हें एक साफ प्लेट में रखें।
  2. एक और प्लेट में या मिक्सिंग कटोरे में बेसन और सूजी को डालें।
  3. अब 1/2 छोटी चमच्च हल्दी पाउडर, स्वाद के अनुसार नमक, 1/2 छोटी चमच्च जीरा का पाउडर और बारीक कटी हुई हरी मिर्च डालें। सारी सूखी सामग्री को एक साथ मिलाएं।
  4. अब सूखे मिश्रण में थोड़ा पानी (लगभग 1/2 कप) धीरे-धीरे करके डालें और मध्यम पतला घोल तैयार करें।
  5. अब एक नाँन-स्टिक पैन गरम करें और फिर आँच कम कर दें। पैन पर 1 बड़ा चम्मच सरसों का तेल डालें और तेल को पूरे  पैन पर फैला दें।
  6. एक कद्दू के फूल को लें और घोल में डुबाएं, ताकि घोल अच्छी तरह से फूल के हर तरफ लग जाए। फिर इस फूल को गर्म पैन पर रखें। इसी तरीके से 4-5 फूल तैयार करें और उन्हें भी पकने के लिए पैन पर रखें।
  7. जब एक ओर पक कर सुनहरा लाल हो जाए तो दूसरी तरफ़ उसी तरह पकाने के लिए फूलों को पलट दें। यदि आवश्यकता हो तो और तेल डालें।
  8. एक प्लेट में तैयार कद्दू के फूल के पकोरों (या कुमरो फुलेर भाजा या कोहड़ा के फूल का बचका) को निकाल कर रखें और शेष कद्दू के फूलों के पकोरे इसी विधी से तैयार करें। कद्दू के फूल के पकोरे (या कुमरो फुलेर भाजा या कोहड़ा के फूल का बचका)  गरम-गरम परोसने के लिए तैयार हैं।
