Spinach or Paalak Paratha Recipe - Learn How To Make Spinach or Paalak Paratha

Paalak Parathas are an excellent variation of parathas to be served for breakfast or can be carried in lunch. It is a great dish for kids who do not generally like to eat spinach as vegetable. Learn to make this healthy and tasty paalak ka paratha recipe with the help of detailed steps and step by step photos given below:

Recipe Yield: 6 parathas

Ingredients for Paalak Ka Paratha / सामग्री:

  • Spinach - 100 gms
  • Salt as per taste
  • Carom Seeds - 1 tea spoon
  • Roasted Flax Seeds Powder - 1 table spoon
  • Green Chilli - 4 finely chopped
  • Ginger - 1 inch piece, finely chopped
  • Onion - 1 medium size, finely chopped
  • Whole Wheat Flour - 1.5 big cup, (cup volume: 250 ml)
  • Refined Oil - as per requirement
  • Water - as per requirement for making dough 

Procedure for making Paalak Ka Paratha:

  1. Seperate fresh and green spinach leaves from the bunch and wash them nicely 2-3 times with plain water.
  2. Roughly chop the spinach leaves into small pieces and transfer them to a mixer jar. Do not add water and grind the spinach leaves to form a fine puree.
  3. In a big mixing bowl take the whole wheat flour.
  4. Add salt as per taste, 1 tea spoon carom seeds, 1 table spoon roasted flax seeds powder and 2 table spoon refined oil to it. Mix all the ingredients well such that the whole wheat mixture begins to bind.
  5. Now add finely chopped onion, green chilli and ginger to the whole wheat mixture.
  6. Then add the spinach leaves puree to it. Mix all the ingredients well using your hands.
  7. Now add little water slowly and knead a soft dough of the mixture, like the dough of whole wheat chapati.
  8. Cover the dough with a clean cotton kitchen cloth and allow the dough to rest undisturbed for 10 minutes.
  9. After 10 minutes prepared small balls of the dough. The size of the balls should be same as that of a wheat ball prepared for making a chapati.
  10. Then take one ball and make it round and smooth. Then dust it with some dry whole wheat flour.
  11. Then roll the ball flat into a round and thin chapati.
  12. Pour 1 tea spoon refined oil over it and then spread it to form a uniform greasy layer.
  13. Now lift one side and fold it at the centre. Similarly lift and fold the other side at the centre. (As shown in the images below)
  14. Again, pour 1 tea spoon refined oil and spread to form a uniform greasy layer. Then fold the other two sides in the same manner.
  15. Press with hands lightly and then dust with dry whole wheat flour. Now roll it flat into a square shaped uniformly flat paratha.
  16. Heat a tawa or a non-stick pan, and grease it slightly with some refined oil. Lower the flame to medium level when the tawa is hot.
  17. Now place the paratha onto it and allow it to cook. Flip to other side and let it cook too. Apply 1 tea spoon refined oil on the top side flip and repeat them same step. Flip, press and cook till both sides turn golden brown, on medium flame.
  18. Transfer the cooked hot paalak paratha to a plate. Prepare all paalak parathas in the same manner and serve them hot with curd, chutney, curries or any pickle.

पालक का पराठा बनाने की प्रक्रिया:

  1. ताजा और पालक के हरे पत्तों को गुच्छे से तोड़ कर अलग करें और उन्हें 2-3 बार सादे पानी के साथ अच्छे से धो लें।
  2. मोटे तौर पर पालक के पत्तों को छोटे टुकड़ों में काट लें और उन्हें मिक्सर जार में डालें। बिना पानी डाले और पालक के पत्तों को पीसकर बारीक प्यूरी बनाएं।
  3. एक बड़े कटोरे में गेहूं का आटा लें। उसमें स्वाद के अनुसार नमक, 1 छोटी चम्मच अजवाइन, 1 बड़ी चम्मच भुना हुआ अलसी का पाउडर और 2 बड़ा चम्मच रिफाइंड तेल डालें। सभी सामग्री को अच्छी तरह से मिलाएं ताकि आटे का मिश्रण बॅंधना शुरू हो जाए।
  4. अब आटे के मिश्रण में बारीक कटा हुआ प्याज, हरी मिर्च और अदरक डालें।
  5. फिर इसमेें पालक को प्यूरी डालें। अपने हाथों से अच्छी तरह से सभी सामग्री को मिलाएं।
  6. अब थोड़ा-थोड़ा पानी धीरे-धीरे डालें और आटे के मिश्रण से चपाती के जैसा नरम आटा गूंध लें।
  7. एक साफ सूती के कपड़े से आटा को ढक्कर 10 मिनट केलिए छोड़ दें।
  8. 10 मिनट के बाद आटा की छोटी लोई तैयार करें। लोई का आकार एक चपाती की लोई के समान होना चाहिए।
  9. फिर एक लोई लें और इसे गोल और चिकना कर लें। फिर सूखा आटा लगाकर लोई को एक पतली चपाती में बेल लें।
  10. 1 छोटी चम्मच रिफाइंड तेल उस पर डालें और फैलाएं।
  11. अब एक तरफ से उठाएं और उसे बीच में मोड़ दें। इसी तरह दूसरी तरफ से उठाएं और उसे भी बीच में मोड़ दें।
  12. फिर, 1 छोटी चम्मच रिफाइंड तेल डालें और फैलाएं। फिर उसी तरह दोनों रफ से उठाएं और उन्हे भी बीच में मोड़ दें ।
  13. हाथों से हल्के से दबाएं और फिर सूखा आटा लगाकर एक चौकोर आकार का पराठा बेल लें।
  14. एक तवा या नॉन-स्टिक पैन गरम करें, और कुछ रिफाइंड तेल डालकर तवा को चिकना करें। तावा गर्म होने पर आॅच को मध्यम स्तर तक कम करें।
  15. अब उस पर पराठा रखें और मधयम आॅच पर पकाएं। पराठा पर 1 छोटी चम्मच रिफाइंड तेल को डालें, फैलाएं और कल्छी की सहायता से पलट दें। अब दूसरी तरफ भी 1 छोटी चम्मच रिफाइंड तेल को डालें और फैलाएं। उल्ट-पलट कर  और हल्का-हल्का दबाक्र दोनों तरफ पर लाल होने तक सेकें।
  16. अब यह गरम-गरम पालक का पराठा दही, चटनी, करी या किसी अचार के साथ परोसने केलिये तैयार है।
