Aam Panna Recipe - Learn How To Make Aam Panna

Learn how to make this refreshing aam panna with the help of step by step photos and detailed recipe given below:

Ingredients for making Aam Panna सामग्री :

  • Raw Mango - 1 medium size
  • Salt as per taste
  • Powder of the roasted cumin seeds  and dried whole red chillis - 1/2 tea spoon 
  • Mint Leaves / Green Coriander Leaves - as per requirement; Finely chopped
  • Sugar - as per taste (optional)
  • Ice Cubes - as per requirement (optional)

Procedure for making Aam Panna:

  1. Wash the raw mango well with water and wipe them dry with a clean cloth.
  2.  Now place the tongs or any iron mesh on the gas stove and turn on the flame.
  3. Place the raw mango over the tongs or iron mesh and then lower the flame. When one side gets cooked and becomes soft then rotate it to get cooked on the other side. Rotate and turn to allow the mango to cook on all sides in this manner. (When the raw mango is cooked it will become soft and change its color from green to greenish yellow.)
  4. Now remove the mango from over the flame and keep it dipped in water contained in a vessel for 10 minutes.
  5. Then remove it from the water and peel off the skin of the mango.
  6. Take 2 glass water in a deep vessel and transfer the mango to it.
  7. Start mashing the mango pulp in water with your hand and remove the mango seed.
  8. Now add salt as per taste, 1/2 tea spoon roasted powder of whole red chillis and cumin seeds. Mix all the ingredients together to prepare a uniform solution.
  9. Then add finely chopped green coriander leaves or mint leaves to the solution and mix well again. The aam panna solution is ready.
  10. If required then add sugar as per taste to the aam panna solution. Mix it well.
  11. Now pour the aam panna solution to beautiful serving glasses and add ice cubes if required. The aam panna is now ready to be served.

आम पन्ना बनाने की प्रक्रिया:

  1. कच्चे आम को पानी के साथ अच्छी तरह धोलें और उसे एक साफ कपड़े से पोछकर सूखा दें।
  2. अब गैस स्टोव पर चिमटे या किसी लोहे की जाल को रखो और गैस को चालू करें।
  3. चिमटे या लोहे के जाल पर कच्चे आम को रखें और फिर गैस की आँच कम करदें। जब एक ओर से पक जाये और नरम हो जाये तो दूसरी तरफ से पकने के लिए इसे घुमाएं। इस तरीके से आम को चारों तरफ से पकाएं। (जब कच्चे आम को पकाया जाता है तो यह नरम हो जाता है और इसका रंग हरा से पीले रंग में बदल जाता है।)
  4. अब आम को गैस से हटा दें और इसे 10 मिनट के लिए एक बर्तन में पानी लेकर उसमें रखदें।
  5. फिर आम को पानी से हटाकर उसको छीलें।
  6. अब एक गहरे पतीले में 2 गिलास पानी लें और पकाए गए आम को इसमें डालें।
  7. आपके हाथ से पानी में आम के गूदे को मसलना शुरू करें और आम के बीज को हटा दें।
  8. अब स्वाद के अनुसार नमक डालें और 1/2 छोटी चम्मच साबुत लाल मिर्च और जीरा को भूनकर बनाया हुआ पाउडर डालें। सभी सामग्री को अच्छे से मिलाएं।
  9. फिर बारीक कटा हुआ हरा धनिया के पत्ते या पुदीना के पत्तों को डालें और एक बार फिर से अच्छी तरह मिलाएं। आपका आम पांन्ना लगभग तैयार है।
  10. यदि आवश्यक हो तो आप आम पन्ना में स्वाद के अनुसार चीनी डालें और अच्छी तरह से मिलाएं।
  11. अब बनाये गए आम पन्ना को सुंदर से गिलास में डालें और यदि आवश्यक हो तो बर्फ के क्यूब्स डालें। आपका आम पांन्ना अब बनकर तैयार है।
