Dhokla Idli

Dhokla Idli is an awesomely delicious snack for all those who love Idli and Dhokla. It can be eaten for breakfast, or snack and can be given to kids in their tiffins. 

Soft and spongy Dhokla Idlis topped with sweet and spicy tadka,

Preparation Time: 4 hours for soaking the grains in water + 10-12 hours for fermenting the Dhokla Idli batter + 10 minutes for preparing all ingredients required for making Dhokla Idli 

Cooking Time: 10-12 minutes for cooking Dhokla Idli + 5-7 minutes for preparing the tadka for Dhokla Idli and final serving

Recipe Yield: 3 servings (4 Dhokla Idli  per serving)

Ingredients for making Dhokla Idli:

  • Basmati Rice or Basmati Chawal or चावल - 1 big cup
  • Bengal Gram or chana dal or चना दाल - 1/2 big cup
  • Splitted Black Gram or Urad dal or उरद दाल - 1/3 big cup
  • Curd or dahi or दही - 1 table spoon
  • Salt as per taste or नमक
  • Eno or ईनो - 1 tea spoon
  • Lemon or nimbu or नींबू - 1/2, medium size
  • Turmeric Powder or haldi powder or हल्दी पाउडर - 1/2 tea spoon
  • Water or pani or पानी - 1 small cup
  • Ingredients for tadka:
    • Curry Leaves or Kari Patta or करी पत्ता - as per requirement
    • Sesame Seeds or til or तिल - as per requirement
    • Black Mustard Seeds or rai or राई दाना - as per requirement
    • Green Chilli or hari mirch or हरी मिर्च - as per requirement
    • Lemon or nimbu or नींबू - 1/2, medium size
    • Water or पानी - 5-6 table spoon for making the sugar solution (Water should be according to the amount of Dhokla Idli prepared)
    • Sugar or cheeni or चीनी - 1 table spoon, for making the sugar solution (or as per taste
  • Refined Oil or रिफाइंड तेल - as per requirement

Procedure for making Dhokla Idli:

  1. Rinse the rice well with clean water and transfer it to a big vessel.
  2. Rinse the Bengal Gram and Splitted Black Gram also with clean water and transfer them to the same vessel in which the rice is kept.
  3. Then add water to this vessel and soak the ingredients in water for 4 hours. Soaking the grains in water for 4 hours will allow them to become soft.
  4. After 4 hours transfer the soaked grains to a mixer jar and grind them together to form a fine paste like batter. If required add 2-3 table spoon water to the mixer jar while grinding the ingredients.
  5. Transfer this batter to a big vessel and cover the vessel with a lid. Allow the batter to rest and ferment for 10-12 hours.
  6. Remove the lid after 10-12 hours and you will see that batter has fermented and risen to double its original level.
  7. Stir and mix the fermented batter with a spoon and then add turmeric powder and salt to it. 
  8. Add curd to this batter and mix all the ingredients well.
  9. Then add lemon juice and eno to the batter. Mix well again. The Dhokla Idli batter is ready to be used
  10. Grease the idli stand with some refined oil or ghee and then pour the Dhokla Idli batter into it with the help of a spoon.
  11. Take a deep vessel with some water in it. Place the idli stand in this vessel. (Remember, the level of water in the vessel should be lower than the base of the idli stand.)
  12. Cover this vessel with a lid and place the vessel on the gas stove. Allow the Dhokla Idli batter to cook over high flame for 10 minutes.
  13. After 10 minutes, remove the lid and poke the prepared Dhokla Idli with a knife to check if they are cooked or not. If the knife comes out clean, then it means the Dhokla Idli are ready. If the knife comes out sticky, then it means that the batter needs to be cooked for some more time in the same manner.
  14. Remove the Dhokla Idli carefully from the Idli stand.
  15. Now take some water (5-6 table spoon) in a bowl and add lemon juice to it.
  16. Add 1 table spoon sugar to the bowl and mix the ingredients well, till the sugar gets completely dissolved in the water and lemon juice solution.
  17. Heat some refined oil in a tadka or frying pan and add sesame seeds and black mustard seeds to it.
  18. Allow the seeds to crackle and then add chopped green chilli and curry leaves to it. Saute the ingredients lightly.
  19. Now pour the sugar solution into the tadka pan. Stir and mix. Then pour this solution over the Dhokla Idli, as shown in the images below.
  20. Transfer the Dhokla Idli to a plate and serve.

ढोकला इडली बनाने की प्रक्रिया:

  1. चावल को अच्छी तरह से साफ पानी से धो लें और इसे एक बड़े बर्तन में डालकर रखें।
  2. चना दाल और उरद दाल को भी साफ पानी से धो लें और उन्हें उसी बर्तन में डालकर रखें जिसमें चावल रखा गया है।
  3. फिर इस पतीले में पानी डालें और 4 घंटे तक चावल और दालों को पानी में भीगने दें। 4 घंटे तक भिगे रहने में चावल और दालें नरम होजाएंगी।
  4. 4 घंटे के बाद भीगे हुए चावल और दालों को मिक्सर जार में डालें और बारीक बैटर के रूप में पीस लें। यदि आवश्यकता हो तो पीसते समय, मिक्सर जार में 2-3 बड़ा चम्मच पानी डाल लें।
  5. इस बैटर को एक बड़े पतीले में निकाल लें और इस पतीले को एक ढक्कन से ढक दें। बैटर में खमीर उठने केलिए, बैटर को 10-12 घंटों के लिए अलग रख दें।
  6. 10-12 घंटे के बाद ढक्कन को हटाएं और आप देखेंगे कि बैटर में अच्छे से खमीर उठ चुका होगा और बैटर फूल कर मात्रा में दोगुना होगया होगा।
  7. एक चम्मच से बैटर को अच्छे से मिलाएं और फिर उसमें हल्दी पाउडर और नमक डालें।
  8. इस बैटर में दही डालें और सारी सामग्री को अच्छी तरह से मिलाएं।
  9. फिर बैटर में नींबू का रस और ईनो डालें। अच्छी तरह से फिर से मिलाएं और आपका ढोकला इडली बनाने का बैटर तैयार है।
  10. थोड़ा रिफाइंड तेल या घी लें और उससे इडली स्टैंड को चिकना कर लें। फिर एक चम्मच की मदद से ढोकला इडली के बैटर को इडली स्टैंड में डालें।
  11. एक गहरे पतीले में थोड़ा पानी डालें और उसमें इडली स्टैंड को रख दें। (याद रखें, पतीले में पानी का स्तर इडली स्टैंड के आधार से कम होना चाहिए।)
  12. इस पतीले को ढक्कन के साथ ढक दें और गैस स्टोव पर रख दें। ढोकला इडली के बैटर को 10 मिनट तक तेज आंच पर पकने दें।
  13. 10 मिनट के बाद, ढक्कन को हटा दें और तैयार ढोकला इडली को चाकू के साथ दबाकर देंखें कि यह पक गई हैं या नहीं। अगर चाकू साफ निकले, तो इसका मतलब है कि ढोकला इडली पक गई हैं। यदि चाकू चिपचिपा निकलता है, तो इसका मतलब है कि ढोकला इडली के बैटर को उसी तरह कुछ और समय के लिए पकाएं।
  14. फिर गैस बंद करदें और सावधानी से इडली स्टैंड से ढोकला इडली को निकालें।
  15. अब एक कटोरी में थोड़ा पानी (5-6 बड़ा चम्मच) लें और इसमें नींबू का रस निचोड़कर डालें।
  16. कटोरी में 1 बड़ा चम्मच चीनी डालें और अच्छी तरह से सामग्री मिलाकर घोल तैयार करें।
  17. तड़का या फ्राइंग पैन में थोड़ा रिफाइंड तेल गरम करें और इसमें तिल और राई दाना डालें।
  18. तिल और राई  को चटकने दें और फिर इसमें कटी हुई हरी मिर्च और करी पत्ता डालें। इस सामग्री को हल्का सा भूनें।
  19. अब चीनी के घोल को तड़का पैन में डालें और मिलाएं। फिर इस तड़का मिश्रण को सारी ढोकला इडली पर घुमाकर डालें।
  20. ढोकला इडली परोंसे जाने केलिए तैयार है।
