Ingredients for making Tinda Bharwa Masala:

  • "Indian round gourd" or "apple gourd" or tinda - 5; (टिंडा)
  • Tomato or tamatar - 1; (टमाटर)
  • Green chilli or hari mirch - 2; (हरी मिर्च)
  • Garlic Petals or lehsun ki kali - 2 ; (लहसुन)
  • Ginger or adrak - 1 inch piece; (अदरक)
  • Onion or pyaz - 1 finely chopped; (प्याज)
  • For garnishing
    • Green chilli or hari mirch - as per requirement; (हरी मिर्च)
    • Coriander Leaves or hara dhaniya - as per requirement; (धनिया पत्ति)
  • Turmeric Powder or haldi powder -1 tea spoon; (हल्दी पाउडर)
  • Coriander Powder - dhaniya powder - 1 tea spoon; (धनिया पाउडर)
  • Cumin Seeds Powder or jeera powder - 1/2 tea spoon; (जीरा पाउडर)
  • Black Pepper Powder or kali mirch powder - 1/2 tea spoon; (काली मिर्च पाउडर)
  • Red Chilli Powder or lal mirch powder - 1/2 tea spoon; (लाल मिर्च पाउडर)
  • Salt as per taste; (स्वाद के अनुसार नमक)
  • Garam Masala Powder - 1 tea spoon; (गरम मसाला पाउडर)
  • Kasturi Methi - as per taste or 1 pinch; (कस्तूरी मेथी)
  • Mustard Oil or sarson tel - as per requirement for cooking; (सरसों का तेल)
  • Water - 1 glass; (पानी)
  • Ingredients for stuffing the Tinda:
    • Turmeric Powder or haldi powder - 1/2 tea spoon; (हल्दी पाउडर)
    • Cumin Seeds Powder or jeera powder - 1/2 tea spoon; (जीरा पाउडर)
    • Black Pepper Powder or kali mirch powder - 1/2 tea spoon; (काली मिर्च पाउडर)
    • Red Chilli Powder or lal mirch powder - 1/2 tea spoon; (लाल मिर्च पाउडर)
    • Salt - 1/2 tea spoon; (नमक)

Procedure for making Tinda Bharwa Masala:

  1. Peel off the "Indian round gourd" or "apple gourd" or tinda and then wash them nicely. Slice off both the ends of the tinda. Now make 2 perpenduicular cuts at the center of the tinda. Do not cut the tinda completely. They should remain joined at one end. (as shown in the images below)
  2. In another plate take the powdered spices (turmeric powder, cumin seeds powder, black pepper powder, red chilli powder) and salt for stuffing the tinda. Mix the powdered spices and salt well.
  3. Then take one tinda and stuff it with the stuffing mixture of spices with the help of a spoon. (as shown in the images below)
  4. In a mixer jar take chopped tomato, ginger, garlic petals and green chillis. Grind the ingredients together to form a fine paste.
  5. In another plate take the powdered spices (turmeric powder, cumin seeds powder, black pepper powder, coriander powder and red chilli powder) for making the gravy masala and mix them together.
  6. Heat a non-stick pan and add mustard oil to it.
  7. When the oil is hot enough for cooking then place the stuffed tinda onto the pan. Lower the flame to low level and allow the tinda to cook for 10-15 minutes. After 10-15 minutes poke the tinda with a knife to check if they are atleast 80% cooked. Then transfer them to a plate to be used later.
  8. Now add some more oil to the same pan and heat it.
  9. When the oil is hot enough for cooking then add the chopped onion to it and saute them till then turn golden red in color.
  10. Then add the paste of tomato-garlic-ginger and green chillis to the pan. Stir and saute the ingredients together.
  11. Now add the mixture of powdered spices prepared for making the gravy masala and salt as per taste to the non-stick pan. Stir and saute the spices till the oil begins to seperate from the cooking ingredients. Saute the spices over low flame only.
  12. Now add 1/2 glass water and garam masala powder to the pan and mix well. Allow it to boil and then add the stuffed and partially cooked tinda to the pan.
  13. Increase the flame to the medium level and cover the pan with its lid. Cook the tinda in the masala gravy for 15 minutes. The tinda will cook completely in this time and a thick gravy like texture shall be obtained. Turn off the flame after 15 minutes. 
  14. Remove the lid and add kasturi methi to the pan. Mix it once and then transfer the prepared "Tinda Bharwa Masala" dish to a serving plate.
  15. Garnish "Tinda Bharwa Masala" dish with chopped coriander leaves and green chillis. Serve hot with rotis, phulkas or parathas.

टिंडा भरवां मसाला बनाने की प्रक्रिया:

  1. टिंडा को छीलकर उन्हें अच्छे से धो लें। टिंडा के दोनों किनारों को काट कर हटा दें और फिर टिंडा के बीच में 2 चीरा लगा दें। टिंडा पूरी तरह से नहीं काटना है। (जैसा कि नीचे चित्रों में दिखाया गया है)
  2. अब एक प्लेट में टिंडा को भरने के लिए सारे पाउडर मसाले (हल्दी पाउडर, जीरा पाउडर, काली मिर्च पाउडर, लाल मिर्च पाउडर) और नमक डालें। पाउडर मसाले और नमक अच्छी तरह मिलालें।
  3. फिर एक टिंडा लें और एक चम्मच की मदद से मसालों के मिश्रण को उसमें अच्छे से भर दें। (जैसा कि नीचे चित्रों में दिखाया गया है) सारे टिंडों को इसी तरह तैयार करें।
  4. एक मिक्सर जार में कटा हुआ टमाटर, अदरक, लहसुन और हरी मिर्च डालकर, बारीक पीस लें।
  5. एक दूसरी प्लेट में ग्रेवी का मसाला बनाने के लिए सारे पाउडर मसालों (हल्दी पाउडर, जीरा का पाउडर, काली मिर्च पाउडर, धनिया पाउडर और लाल मिर्च पाउडर) को निकाल कर एक साथ मिला लें।
  6. एक नॉन-स्टिक पैन लें और इसमें सरसों का तेल डालकर गरम करें।
  7. जब तेल टिंडों को पकाने के लिए गरम होजाए, तो भरे हुए टिंडों को पैन में पकने केलिए रखें। आँच को कम करके और टिंडों को 10-15 मिनट के लिए पकने दें। 10-15 मिनट के बाद टिंडों में चाकू डालकर देखें कि वे करीब 80% तक पक चुके हैं या नहीं। फिर उन्हें बाद में इस्तेमाल करने के लिए एक थाली में निकाल लें।
  8. अब इसी पैन में थोड़ा और तेल डालें और इसे गरम करें।
  9. जब तेल पर्याप्त गरम होजाए, तब इसमें कटा हुआ प्याज डालें और उन्हें सुनहरा लाल रंग होने तक भूनें।
  10. फिर पैन में टमाटर-लहसुन-अदरक और हरी मिर्च का पेस्ट डालें। सारी सामग्री को लगातार चलाते हुए पकाएंं।
  11. अब पैन में ग्रेवी बनाने के लिए पाउडर मसालों (हल्दी पाउडर, जीरा का पाउडर, काली मिर्च पाउडर, धनिया पाउडर और लाल मिर्च पाउडर) का मिश्रण और स्वाद के अनुसार नमक डालें। मसालों से तेल के अलग होनें तक सारी सामग्री को भूनें। मसालों को केवल कम आँच पर ही भूनें।
  12. अब पैन में 1/2 गिलास पानी और गरम मसाला पाउडर डालें और अच्छी तरह से मिलाएं। पानी में उबाल आने दें और फिर पैन में आंशिक रूप से पके हुए भरवां टिंडों को डालें।
  13. आँच को मध्यम स्तर तक बढ़ाएं और पैन को ढक्कन के साथ ढक दें। मसाला ग्रेवी में 15 मिनट तक टिंडों को पकने दें। इतने  समय में टिंडे पूरी तरह से पक जाएंगे और ग्रेवी भी गाढ़ी होजाएगी। 15 मिनट के बाद गैस बंद कर दें।
  14. ढक्कन को हटा दें और तैयार टिंडा भरवां मसाला के ऊपर कस्तूरी मेथी डालें और इसे एक बार मिलाएं। फिर तैयार "टिंडा भरवां मसाला" को एक सुन्दर डिश में परोसें।
  15. "टिंडा भरवां मसाला" को कटी हुई धनिया पत्ति और हरी मिर्च के साथ गार्निश करें और पकवान रोटी, फुलके या पराठों के साथ गरमा-गरम परोसें।
